Crust

  • 1.5 cups crushed graham crackers Use freshly crushed for better flavor.
  • 0.25 cups melted butter Rich, golden butter to bind the crust.

Filling

  • 8 oz mascarpone cheese, softened Provides a creamy texture.
  • 1 cup cream cheese, softened Adds depth and richness.
  • 0.5 cups sugar Enhances the sweetness.
  • 2 large eggs Provide stability.
  • 0.5 cups fresh orange juice Brightens the flavor.
  • Zest of 1 orange Enhances the orange aroma.
  • 0.5 tsp vanilla extract Complements the flavors.

Topping

  • 0.5 cups dark chocolate chips Rich and velvety for the ganache.
  • 0.25 cups heavy cream For the ganache's perfect texture.

Instructions
 

Prepare the Crust

  • In a medium bowl, combine crushed graham crackers with melted butter. Mix until combined and press into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for about 8 minutes.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the softened mascarpone cheese and cream cheese together with sugar until smooth. Add the eggs one at a time, beating well after each addition.
  • Slowly pour in the fresh orange juice, orange zest, and vanilla extract, stirring gently.

Bake the Cheesecake

  • Pour the filling over the pre-baked crust and bake at 325°F (160°C) for 45-50 minutes. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours, preferably overnight.

Prepare Chocolate Ganache

  • Gently heat the heavy cream in a small saucepan until it simmers. Pour it over the dark chocolate chips in a bowl, let it sit for a few minutes, then whisk until melted.

Drizzle Ganache

  • Remove cheesecake from the springform pan and drizzle ganache over the top. Let it cascade down the sides.

Notes

Allow ample chilling time for the cheesecake to set properly. For a healthier alternative, consider using a whole grain crust or natural sweeteners.
