Preparation

  • In a large bowl, combine the flour, salt, and baking powder. Gradually add the warm water and olive oil while mixing until a dough begins to form.
  • Turn the dough out onto a lightly floured surface. Knead for 5-7 minutes until the dough is smooth and elastic.
  • Cover the dough with a cloth or plastic wrap and let it rest for about 15 minutes.
  • While the dough rests, heat a pan over medium heat. In a separate bowl, combine the chopped green onions, spinach, garlic powder, salt, and pepper. Mix well.
  • Divide the rested dough into small portions. Roll each portion into a circle, about 6 inches in diameter.
  • Sprinkle the spinach and green onion mixture on top of each dough circle.
  • Fold the dough in half, encasing the filling, then gently roll it out again to flatten the packed dough.

Cooking

  • Place the filled flatbreads into the heated pan. Cook for about 2-3 minutes on each side, or until they turn a lovely golden brown.
