  • 1 lb Ground chicken Feel free to substitute with ground turkey or beef.
  • 1 cup Fresh grated Parmesan This gives the meatloaf a creamy, cheesy flavor that's simply irresistible.
  • 1 cup Panko breadcrumbs For that extra crunch and texture.
  • 2 large Eggs These act as the binding agents.
  • 1 medium Yellow onion Diced small to blend seamlessly.
  • 2 cloves Garlic Chopped to release that aromatic, savory essence.
  • 2 tbsp Fresh parsley Chopped for a fresh touch.
  • 1/4 cup Whole milk This helps keep the meatloaf moist.
  • 1 tsp Italian seasoning It’s a must for a flavor boost.
  • 1/2 tsp Garlic powder More is better when it comes to flavor!
  • 1/4 tsp Black pepper For a touch of spice.
  • 1/2 tsp Sea salt Season just right.
  • 2 tbsp Olive oil For greasing the pan.
  • 1/4 cup Extra Parmesan For a cheesy topping.
  • 1-2 tbsp Butter Dotted on top for that indulgent finish.

Preparation

  • Preheat your oven to 375°F.
  • Soak the panko breadcrumbs in 1/4 cup of whole milk.
  • Finely dice the onion and chop the garlic.
  • In a bowl, whisk together the eggs, soaked breadcrumbs, diced onion, chopped garlic, and parsley.
  • Gently fold in the ground chicken, Italian seasoning, garlic powder, black pepper, and sea salt. Mix until just combined.
  • Shape the mixture into a loaf and place it in a greased pan. Top with extra Parmesan and dabs of butter.
  • Bake until it's golden and delicious, approximately 35-40 minutes.

Notes

Watch your cooking time carefully; a well-cooked meatloaf will be moist. If you have leftovers, freeze portions wrapped tightly for later. Reheat in a 350°F oven or microwave with a damp paper towel covering.
