For the Grilled Cheese

  • 4 slices slices of artisan bread Choose a thick, crusty type perfect for grilling.
  • 2-3 tbsp unsalted butter, softened Essential for a golden-brown crust.
  • 4 tbsp basil pesto Provides a fresh and aromatic punch.
  • 1-2 oz sliced mozzarella cheese Soft and melty, adds a creamy texture.
  • 1-2 oz sliced provolone cheese For a rich flavor profile.

Preparation

  • Preheat a large cooking pan over medium to medium-low heat.
  • Spread softened butter generously on one side of each slice of artisan bread.
  • On the inside of each slice, spread a generous layer of basil pesto.
  • Layer mozzarella cheese slices on one slice and provolone cheese slices on the other.

Cooking

  • Carefully place the bread slices in the preheated pan with the buttered side facing down.
  • Toast the bread until golden brown and crispy while the cheese melts.
  • Press the two slices together and let rest for 5-10 minutes before slicing.

Notes

For added flavor, consider incorporating sun-dried tomatoes or fresh spinach inside the sandwich. Grate Parmesan on the outside before grilling for an extra crunchy crust. Experiment with different pestos for variety.
