For the Glaze

  • 1 1/2 cups powdered sugar For the sweet glaze.
  • 2-3 tablespoons reserved pineapple juice To create a luscious finish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt, then set this mixture aside.
  • In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  • Add the beaten egg, sour cream, and drained crushed pineapple. Mix well until combined.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  • Pour the batter into your prepared loaf pan and smooth the top.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool for about 10 minutes before preparing the glaze.

  • In a small bowl, whisk together the powdered sugar and reserved pineapple juice until smooth.
  • Drizzle the glaze generously over the cooled bread. Allow to cool completely before slicing and serving.

Notes

Use room-temperature ingredients for a smoother batter. Consider adding chopped nuts for crunch or spices for extra flavor. You can substitute half of the all-purpose flour with whole wheat flour for added nutrition.
