Frosting Ingredients

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prep your baking pans by greasing and flouring two 8-inch round cake pans.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt, then set it aside.
  • In a large mixing bowl, beat the softened butter and white sugar together until light and fluffy, about 3 minutes.
  • Add each of the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract and pink dragon fruit puree until just combined.
  • Gradually incorporate the dry ingredients into the wet mixture, alternating with the milk.
  • Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Baking

  • Bake the cakes for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • In a large mixing bowl, beat the softened butter until smooth and creamy.
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  • Stir in the vanilla extract, heavy cream, and pink dragon fruit puree. Add pink food coloring if desired.

Assembly

  • Once the cakes have cooled, spread a generous layer of frosting on top of one cake.
  • Place the second cake on top and frost the entire cake.

Notes

Allow butter and eggs to reach room temperature for best results. For more intense dragon fruit flavor, add extra puree to frosting. Use an offset spatula for smooth spreading, and experiment with decoration.
