  • 1 teaspoon vanilla extract Optional for added flavor.
  • 0.5 cup heavy cream Optional for creamier texture.

Preparation

  • In a medium saucepan, combine the water and sugar over medium heat and stir occasionally until sugar has dissolved to make a simple syrup.
  • Remove the syrup from heat and let it cool to room temperature.
  • Once cooled, add the fresh lemon juice, cranberry juice, lemon zest, and vanilla extract to the syrup, and stir well to combine.
  • If using, mix in the heavy cream for a creamier texture.
  • Transfer the mixture into a shallow dish or freezer-safe container.

Freezing

  • Place the mixture in the freezer, stirring every 30 minutes to break up ice crystals.
  • After 3-4 hours, or once it reaches slushy consistency, it's ready to serve.

Serving

  • Serve immediately for soft-serve texture, garnished with extra lemon zest or fresh mint.
  • Alternatively, store in an airtight container for later enjoyment.

Ensure that the lemon juice is fresh for best results. You can reduce sugar or use natural sweeteners. Experiment with adding other fruits for variations. Store in an airtight container in the freezer for up to two weeks.
