  • 0.5 cups sugar adding sweetness to the cheesecake mixture
  • 1 tsp vanilla extract infusing the dessert with warm flavor
  • 3 pieces eggs providing structure and creaminess
  • 0.5 cups pistachios, finely chopped adding a nutty crunch
  • 0.5 cups heavy cream enhancing the creamy texture

Raspberry sauce ingredients

  • 1 cup fresh raspberries offering a burst of fruity freshness
  • 0.25 cups sugar sweetening the raspberry sauce
  • 1 tbsp lemon juice balancing the sweetness with a hint of tartness

Instructions

Crust Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar.
  • Press the crumb mixture into the bottom of the prepared pan.
  • Bake for 8-10 minutes, then let it cool.

Cheesecake Filling

  • In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  • Add vanilla extract and eggs, mixing until well incorporated.
  • Gently fold in finely chopped pistachios and heavy cream.
  • Pour the cheesecake mixture over the cooled crust and smooth the top.
  • Bake for 50-60 minutes or until the center is just set.
  • Once done, let it cool completely before refrigerating for at least 4 hours or overnight.

Raspberry Sauce Preparation

  • In a saucepan over medium heat, combine fresh raspberries, sugar, and lemon juice.
  • Cook until the raspberries break down and the mixture thickens.
  • Remove from heat and allow it to cool.

Serving

  • Remove the cheesecake from the refrigerator and drizzle the cooled raspberry sauce generously over the top.

Notes

Ensure cream cheese is fully softened for a smooth mixture. Use fresh raspberries for best flavor. Consider adding a pinch of salt to the crust. A more intense pistachio flavor can be achieved by incorporating pistachio paste or extract. Garnish with extra fresh raspberries and whole pistachios before serving.
