  • 1/3 cup active sourdough starter Must be well-fed and bubbly
  • 2 1/4 cups all-purpose flour Provides a comforting base

  • 3 tbsp Greek yogurt, sour cream or ricotta cheese Contributes creaminess
  • 2 tbsp olive oil Offers richness
  • 1/2 cup whole milk Ensures softness in the dough

Instructions
 

Preparation

  • In a large bowl, combine the active sourdough starter, all-purpose flour, granulated sugar, salt, Greek yogurt, olive oil, and whole milk. Mix until no dry streaks remain.
  • If the dough feels too wet, gradually add more flour until it becomes manageable and not overly sticky.
  • Cover the bowl with a damp tea towel and let the dough rest in a warm spot for about 8 hours, or until it has doubled in size.
  • Once risen, turn the dough onto a floured surface and divide it into 8 equal pieces, shaping each into a ball.

Cooking

  • Preheat a cast iron skillet over medium-high heat.
  • Roll each dough ball into a flat disk approximately 1/4 inch thick.
  • Cook the flatbread in the skillet for about 1-2 minutes, or until bubbles begin to form on the surface. Flip it carefully and cook for another 1-2 minutes until golden.
  • Transfer the cooked flatbread to a wire rack to cool slightly and repeat with the remaining dough.

Notes

Add herbs like rosemary or thyme into the dough for extra flavor. Use flavored olive oil for variety. Experiment with dough thickness for different textures.
