Instructions
 

Preparation

  • In a medium bowl, combine the 3 cups of salsa with the 2 teaspoons of reduced-sodium taco seasoning. Mix well to create a flavorsome base.
  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • Spread 1 cup of the salsa mixture evenly across the bottom of the dish.
  • Take the 14 corn tostadas and break them into smaller pieces, then layer them over the salsa in the baking dish.
  • Evenly distribute the drained and rinsed pinto beans over the tostadas, followed by a sprinkle of chopped scallions.
  • Generously sprinkle the shredded Mexican cheese blend over the layered mixture.
  • In a separate bowl, whisk together the 6 large eggs, kosher salt, and black pepper until smooth. Pour the egg mixture over the layers.

Baking

  • Bake the casserole in your preheated oven for 30-35 minutes, or until the eggs are set and the cheese has melted to a bubbly golden perfection.

Serving

  • Once baked, top with the optional avocado and cilantro if desired, serving warm.
