Ingredients

For the Raspberry Sauce

  • 2 cups fresh raspberries juicy and vibrant
  • 1/2 cup sugar to sweeten the sauce
  • 1 tbsp lemon juice for a hint of zing

For the Freakshakes

  • 2 cups vanilla ice cream creamy and rich
  • 1 cup whole milk for that smooth texture
  • 1/2 cup raspberry sauce homemade from the above ingredients
  • 1 cup whipped cream light and fluffy
  • 1 tbsp powdered sugar to sweeten the cream
  • 2 tbsp raspberry jam for the dramatic drizzle
  • 4-6 pieces mini cheesecake slices grab your favorite store-bought or homemade
  • to taste fresh raspberries for garnish to add freshness and pop
  • to taste extra graham cracker crumbs for garnish to elevate the presentation

Instructions

Preparing the Raspberry Sauce

  • In a small saucepan, combine the fresh raspberries, sugar, and lemon juice.
  • Cook over medium heat while stirring occasionally until the raspberries start to break down and the mixture thickens—about 8-10 minutes.
  • Once thickened, remove the saucepan from heat and let it cool to room temperature.

Creating the Freakshakes

  • In your blender, combine the vanilla ice cream, whole milk, and 1/2 cup of the prepared raspberry sauce.
  • Blend until the mixture is completely smooth and creamy; this step should take only a minute or so.

Assembling the Freakshakes

  • Drizzle raspberry jam along the inside of each glass for added flavor and a beautiful presentation.
  • Fill the glasses about 3/4 full with the shake blend.
  • In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
  • Generously spoon a dollop of the whipped cream on top of each freakshake, making it as tall and fluffy as desired.
  • Sprinkle the top with crushed graham crackers and place a mini cheesecake slice right on top.
  • Garnish with fresh raspberries and scatter extra graham cracker crumbs for a decorative touch.

Notes

For an even more special shake, blend in extra frozen raspberries or add a splash of vanilla extract. Keep glasses icy cold before assembling for optimal chill. Consider setting up a 'freakshake bar' for customizable toppings.
