Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  • Beat in the eggs one at a time and stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually incorporate this dry mixture into the butter and sugar mix, stirring just until combined.
  • Gently fold in the chopped raspberries and semi-sweet chocolate chips.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly browned.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

Using room temperature butter helps in achieving a lighter cookie. For a chewier texture, underbake slightly. Store leftovers in an airtight container for up to five days or freeze for up to three months.
