Ingredients
  

For the crust

  • 1 sheet refrigerated pie crust or 6 mini tart shells

For the filling

  • 1 cup fresh raspberries juicy and fragrant
  • 1/4 cup raspberry jam thick and sweet
  • 1 tsp lemon juice adds brightness
  • 1/2 cup mascarpone or cream cheese creamy and rich
  • 2 tbsp powdered sugar for sweetening the filling
  • 1/2 tsp vanilla extract classic flavor
  • Fresh mint leaves optional for garnish for a refreshing touch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Press the pie crust into tart pans, ensuring they fit snugly, and prick the bottoms with a fork.
  • If using mini tart shells, fill them similarly.

Baking

  • Place the prepared crusts in the oven and bake for 10-12 minutes or until golden brown. Remove from the oven and allow to cool completely.

Filling

  • In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Whip until smooth and fluffy.
  • In another bowl, mash half of the fresh raspberries with the raspberry jam and lemon juice to create a spreadable mixture.

Assembly

  • Spread a layer of the mascarpone mixture into each cooled tart shell. Top with the raspberry mixture and remaining whole raspberries.
  • If desired, add a sprig of fresh mint to each tart for garnish.

Chilling

  • Cover the tarts and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

These tarts can be made ahead of time and stored in the refrigerator for up to 2-3 days. Consider adding a pinch of cinnamon or orange zest to the mascarpone for extra flavor.
