Ingredients
  

Crust

  • 1 cup graham cracker crumbs These add a sweet, crisp base.

Cheesecake Filling

  • 16 ounces cream cheese, softened The heart of our cheesecake, creamy and rich.
  • 1 cup granulated sugar Balances the tartness of the berries.
  • 1 teaspoon vanilla extract Infuses a warm, aromatic essence.
  • 3 large eggs For structure and smoothness.
  • 1/2 cup sour cream Adds tanginess and creaminess.

Raspberry Mixture

  • 1 cup fresh raspberries Juicy and vibrant for swirls of freshness.
  • 2 tablespoons raspberry jam Intensifies the raspberry flavor.

Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C) and line a 9x9-inch baking pan with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand. Press it firmly into the bottom of the prepared pan to form an even crust.
  • Bake for 8-10 minutes until golden, then remove it from the oven and allow it to cool.

Making the Filling

  • In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the sugar and vanilla extract, mixing until well combined.
  • Add the eggs one at a time, mixing well after each addition. Lastly, stir in the sour cream.

Raspberry Swirl

  • In a small bowl, mash the fresh raspberries with the raspberry jam until well blended.
  • Pour the cheesecake filling over the cooled crust, then drop spoonfuls of the raspberry mixture on top. Use a knife to gently swirl the raspberry mix into the cheesecake for a marbled effect.

Baking and Cooling

  • Bake the cheesecake bars in the preheated oven for 45-50 minutes until the center is set and slightly jiggly.
  • Remove from the oven and let it cool completely. Refrigerate for at least 4 hours before serving.

Notes

For added flavor, consider adding lemon zest to the cheesecake. For a lighter version, substitute low-fat cream cheese and Greek yogurt. Frozen raspberries can also be used, but strain to avoid excess moisture.
