Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  • In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract to the butter mixture, beating until smooth.
  • Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
  • Gently fold in the white chocolate chips, raspberries, and oats (if using).

Baking

  • Using a tablespoon, drop cookie dough onto the prepared baking sheet, spacing about 2 inches apart.
  • Bake in preheated oven for 10-12 minutes or until edges are golden and center is set but soft.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
