Coating Mixture

  • 1/2 cup flour Acts as the first layer of coating.
  • 1 piece egg Helps bind the flavors together.
  • 1 cup milk Adds a creamy texture.
  • 1.5 cups bread crumbs Ensures a golden, crunchy exterior.
  • 1 tsp cayenne pepper Boosts the spice factor.
  • 1 tsp paprika For a rich, smoky flavor.
  • 1 tsp garlic powder For an aromatic, savory taste.

Frying

Instructions
 

Preparation

  • Combine the shredded Pepper Jack cheese and diced jalapeños in a bowl, mixing until evenly distributed.
  • Shape the cheese mixture into small balls, about 1 1/2 inches in diameter, and place them on a cookie sheet.
  • Chill the cheese balls in the freezer for about 30 minutes.

Coating

  • Preheat your deep fryer to 350°F (175°C).
  • Prepare three separate bowls: one with flour, one with whisked egg and milk, and one with bread crumbs, cayenne pepper, paprika, and garlic powder.
  • Coat each chilled cheese ball first in flour, then dip it into the egg mixture, letting excess drip off before coating in the bread crumbs.

Frying

  • Fry the coated cheese balls in batches for 3-4 minutes or until golden brown and crispy.
  • Remove from oil and drain on paper towels.

Serving

  • Serve Rattlesnake Bites hot with preferred dipping sauces.

Notes

For a fresh twist, add chopped cilantro or green onions. Try different cheeses or mix in crushed tortilla chips for added crunch. You can bake them instead of fry at 400°F (200°C) for about 15-20 minutes.
