Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Season the red snapper fillets with salt, pepper, and paprika.
  • Place the fillets in the skillet and cook for 4-5 minutes on each side until golden brown.
  • Remove the fillets from the skillet and let them rest.

Cooking the Sauce

  • In the same skillet, add the chopped onion, bell pepper, and minced garlic.
  • Sauté the vegetables for 3-4 minutes until softened.
  • Stir in the diced tomatoes, Creole seasoning, thyme, salt, and pepper.
  • Let the mixture simmer for 5 minutes.
  • Pour in the heavy cream and stir; allow to simmer for another 3-5 minutes to thicken.
  • Return the red snapper fillets to the skillet and spoon the sauce over them.
  • Heat everything together for 2-3 minutes.
  • Garnish with chopped parsley before serving.

Notes

For a healthier twist, substitute heavy cream with coconut milk or Greek yogurt. Consider adding spinach, zucchini, or mushrooms for more vegetables. Chicken or tofu can be used instead of fish.
