Ingredients
  

For the salad

  • 1 pint fresh blueberries bursting with sweetness
  • 2 peaches, diced juicy and fragrant
  • 2 Persian cucumbers, sliced crisp and refreshing
  • 1/2 cup crumbled feta creamy and tangy

For the vinaigrette

  • 3 tablespoons fresh lemon juice zesty and bright
  • 1 tablespoon dijon mustard adding a touch of spice
  • 1 tablespoon honey for added sweetness
  • 1 tablespoon olive oil rich and smooth
  • 1 tablespoon finely chopped basil aromatic and fragrant
  • to taste Kosher salt
  • to taste Fresh ground black pepper

Preparation

  • In a large serving bowl, combine the fresh blueberries, diced peaches, sliced cucumbers, and crumbled feta.
  • In a jar with a lid, mix together the fresh lemon juice, dijon mustard, honey, olive oil, chopped basil, kosher salt, and black pepper. Seal the jar tightly and shake vigorously or whisk until fully combined.
  • Pour the vinaigrette over the salad and gently toss to ensure everything is evenly coated.
  • Taste for seasoning and adjust as needed. Garnish with extra basil if desired.
  • Serve immediately or refrigerate until ready to serve.

Notes

Choose ripe, organic fruits for enhanced flavor. You can add avocado for creaminess or toasted nuts for crunch. Experiment with different herbs like mint or cilantro for variety.
