Ingredients
  

For the Gnocchi Dish

  • 1 tablespoon olive oil
  • 8 oz crimini mushrooms, sliced
  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning or Herbs from Provence
  • 1/2 teaspoon smoked paprika or more to taste
  • 5 oz fresh spinach
  • 1/4 teaspoon salt or to taste
  • Coarsely ground black pepper to taste
  • Red pepper flakes to taste

Instructions
 

Cooking the Mushrooms

  • Heat 1 tablespoon of olive oil in a large skillet over high heat. Once hot, add the sliced crimini mushrooms, season lightly with salt and pepper, and sauté for about 1 to 2 minutes until lightly browned. Remove half of the cooked mushrooms to a plate and set aside.

Cooking the Gnocchi

  • In the same skillet, add the uncooked gnocchi along with the chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and an additional 1/4 teaspoon of salt. Bring this mixture to a boil over medium heat.
  • Once boiling, cover the skillet and cook for 5 minutes, allowing the gnocchi to absorb the flavors.

Adding the Spinach

  • After 5 minutes, stir in the fresh spinach and cook frequently until it wilts, about 5 minutes.

Final Seasoning

  • Taste and adjust seasonings, adding more salt, black pepper, and red pepper flakes if desired. Top with remaining sautéed mushrooms for presentation.

Notes

For added flavor, consider adding grated Parmesan cheese or a squeeze of fresh lemon juice. Let the dish sit for a few minutes before serving to allow flavors to meld.
