Ingredients
  

For the crust

  • 2 cups chocolate cookie crumbs like crushed Oreos
  • 1/2 cup unsalted butter melted

For the mousse filling

  • 2 cups semisweet chocolate chips for rich chocolate flavor
  • 1.5 cups heavy whipping cream divided
  • 1/4 cup powdered sugar for sweetness
  • 1 teaspoon vanilla extract for depth of flavor

For the topping

  • 1 cup heavy whipping cream whipped
  • 2 tablespoons powdered sugar for sweetness
  • chocolate shavings or cocoa powder for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine the chocolate cookie crumbs and melted butter.
  • Press the mixture evenly into the bottom of the prepared pan.
  • Bake for 8-10 minutes, then allow to cool completely.

Mousse Filling

  • Place 2 cups of chocolate chips into a heatproof bowl.
  • In a saucepan, heat 1 cup of heavy whipping cream until it simmers.
  • Pour the hot cream over the chocolate chips and let sit for 2 minutes.
  • Stir gently until the chocolate melts and becomes smooth.
  • Add 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract, and mix until silky.
  • In another bowl, whip 1/2 cup of heavy whipping cream until soft peaks form.
  • Fold the whipped cream into the cooled chocolate mixture gently.
  • Pour the mousse filling onto your crust and smooth it out.
  • Chill in the refrigerator for at least 4 hours, preferably overnight.

Topping

  • Whip 1 cup of heavy whipping cream with 2 tablespoons of powdered sugar until stiff peaks form.
  • Spread the whipped cream over the mousse layer.
  • Top with chocolate shavings or a dusting of cocoa powder before serving.

Notes

For the best texture, allow the mousse to set overnight. Use a hot, dry knife for clean slices.
