  • 1/4 cup graham cracker crumbs Optional, for rolling to lend texture and crunch.

Preparation

  • In a medium bowl, combine ricotta cheese with chopped pistachios.
  • Add honey, vanilla extract, cinnamon, and a pinch of salt.
  • Mix until smooth and well-combined.
  • Roll the mixture into small bite-sized balls, about 1 inch in diameter.
  • If using, roll each ball in graham cracker crumbs.
  • Place on a tray lined with parchment paper.
  • Drizzle extra honey over the bites and garnish with more chopped pistachios.
  • Refrigerate for at least 30 minutes to firm up.

Notes

Consider folding in finely chopped dried fruits for extra flavor. Garnish with edible flowers or cacao nibs for extra flair. Strain ricotta through cheesecloth if it's too watery.
