For the Cream Cheese Frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. Mix until evenly distributed.
  • In a separate bowl, whisk together the egg, buttermilk, vegetable oil, vanilla extract, red food coloring, and vinegar.
  • Add the wet mixture to the dry ingredients and stir until smooth.
  • Spoon the batter into the cupcake liners, filling each about 2/3 full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cupcakes to cool completely on a wire rack.

Frosting

  • In a bowl, beat together the softened cream cheese and butter until smooth.
  • Gradually add the powdered sugar, one cup at a time, continuing to beat until fluffy and smooth.
  • Mix in the vanilla extract and adjust the consistency with milk if needed.
  • Generously frost each cooled cupcake with the cream cheese frosting.

Notes

For an elevated flavor, add a teaspoon of almond extract instead of some vanilla. Try adding lemon zest for a twist. You can use pre-made frosting if in a rush, but homemade is best!
