Ingredients
  

For the gelato

  • 1 cup shelled pistachios Toast them for best flavor.
  • 1.5 cups whole milk Forms the creamy base.
  • 1 cup heavy cream Adds luxurious silkiness.
  • 3/4 cup granulated sugar For sweetness.
  • 1/4 cup honey Balances the sweetness.
  • 1 teaspoon rosewater Use high-quality for best aroma.
  • 4 large egg yolks Adds richness.
  • 1/2 teaspoon vanilla extract Rounds out the flavor.
  • a pinch salt Enhances flavor.

Instructions
 

Preparation

  • Toast the shelled pistachios in a dry skillet over medium heat for 2–3 minutes until fragrant.
  • Allow the pistachios to cool, then pulse them in a food processor until they reach a fine, sandy texture.
  • In a saucepan, combine the whole milk, heavy cream, granulated sugar, and honey. Heat gently over medium heat, stirring occasionally until the sugar dissolves and bubbles form at the edges.
  • In a separate bowl, whisk the egg yolks until smooth and pale. Gradually pour some of the hot milk mixture into the yolks while whisking constantly, then pour it back into the saucepan while stirring continuously.
  • Cook the mixture over low heat, stirring, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Remove from heat and cool.
  • Stir in rosewater, vanilla extract, ground pistachios, and a pinch of salt. Cool to room temperature.
  • Chill the mixture in the fridge for at least 4 hours or preferably overnight.

Churning & Freezing

  • Pour the chilled mixture into an ice cream maker and churn according to manufacturer's instructions.
  • Transfer the gelato to a container and freeze for at least 2 hours before serving.

Notes

For best results, ensure to chill your mixture thoroughly before churning. You can substitute heavy cream with full-fat coconut milk for a dairy-free version.
