For the Rice

For the Shirazi Salad

  • 1 tablespoon fresh mint, chopped For aromatic freshness.

Making Saffron Water

  • Sprinkle the saffron over an ice cube in a small dish, allowing it to melt and infuse flavor into the water.

Cooking the Chicken

  • In a large pot, heat the vegetable oil over medium-high heat.
  • Season chicken pieces generously with the spice mix.
  • Brown the chicken pieces with the chopped onions.
  • Add minced garlic, remaining spices, and tomato paste to the pot.
  • Pour in saffron water and chicken stock, stirring gently.
  • Let it simmer uncovered on low heat for about four hours or until chicken is tender.

Cooking the Rice

  • Cook the basmati rice according to package directions.
  • In a separate pan, heat butter and add dried barberries and sugar.
  • Sauté until barberries are fragrant.
  • Mix cooked rice with barberry mixture and saffron water, layering it for presentation.

Making the Shirazi Salad

  • Combine diced cucumber, tomatoes, and red onion in a bowl.
  • Squeeze in lemon juice and add mint.
  • Toss together and let chill before serving.

Notes

For enhanced flavor, marinate the chicken overnight in spices. Substitute hard-to-find barberries with dried cranberries, keeping in mind flavor differences. Taste as you go to adjust seasoning.
