Preparation

  • Heat oil in a large skillet or wok over medium-high heat.
  • Add sliced beef to the pan and sear until browned on all sides (about 2-3 minutes). Remove the beef and set aside.
  • In the same pan, add sliced onions and sauté until soft and golden (around 5 minutes).
  • Incorporate minced garlic into the pan and stir until fragrant (about 30 seconds).
  • Push cooked onions and garlic to the side. Pour in the beaten eggs and scramble gently.
  • Once eggs are nearly cooked, add cold rice and break up any clumps. Mix evenly.
  • Stir in soy sauce and oyster sauce, then return seared beef to the pan and toss everything together.
  • Season with salt and pepper to taste, garnish with chopped green onions before serving.

Notes

Use cold, day-old rice for the best texture. Consider marinating the beef in soy sauce and cornstarch for extra flavor. Adding vegetables like bell peppers can enhance the dish's nutrition.
