Ingredients
  

For the Beef Filling

  • 2 lbs bone-in beef short ribs
  • 2 tbsp olive oil for browning the short ribs
  • 1 cup beef broth
  • 1 cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil plus extra for the sauce
  • Salt and pepper to taste

For the Lasagna

  • 12 pieces lasagna noodles, cooked and drained
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups mozzarella cheese, shredded plus more for topping
  • 1/2 cup Parmesan cheese, grated
  • 1 piece egg
  • 1 tbsp fresh parsley, chopped (optional)

For the Sauce

  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • 1 tsp dried basil

Instructions
 

Preparation of Short Ribs

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the short ribs with salt and pepper, then brown them on all sides for approximately 5-7 minutes.
  • Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant.
  • Introduce beef broth, crushed tomatoes, tomato paste, Worcestershire sauce, oregano, and basil. Bring the mixture to a gentle simmer, cover it, and allow it to cook on low for 2.5 to 3 hours.
  • After cooking, remove the beef from the bones and shred it. Simmer the shredded beef in the sauce for another 10-15 minutes.

Preparation of Filling and Assembly

  • In a separate bowl, mix together ricotta, mozzarella, Parmesan, egg, and parsley until creamy.
  • Preheat your oven to 375°F (190°C). Lay the cooked lasagna noodles flat, spread a layer of the cheese mixture on top, spoon some shredded beef, then roll each noodle tightly.
  • Place the lasagna rolls seam-side down in a greased baking dish.

Baking

  • In a saucepan, heat marinara sauce with olive oil and dried basil over medium heat. Pour it over the lasagna rolls.
  • Cover the dish with foil and bake for 20-25 minutes, then remove the foil and bake for another 10 minutes until bubbly and golden.
  • Allow to cool slightly, garnish with fresh parsley if desired, and serve warm.

Notes

To enhance the flavor, brown the beef ribs thoroughly, add a splash of beef broth while simmering, and incorporate fresh herbs for added aroma. Use store-bought marinara sauce for quicker preparation.
