  • 1 can diced tomatoes with green chilies Adds zest and spice.
  • 0.5 cup onion, chopped Provides sweetness and depth.
  • 0.5 cup bell pepper, chopped Adds freshness and color.
  • 1 tsp garlic powder Enhances flavor with aroma.
  • 1 tsp chili powder For warmth and complexity.
  • to taste Salt and pepper Essential for balancing flavors.

Preparation

  • Add 16 oz of cottage cheese to the crockpot.
  • Layer in 1 cup of shredded cheddar cheese.
  • Add 1 can of diced tomatoes with green chilies.
  • Chop and add 1/2 cup of onion and 1/2 cup of bell pepper.
  • Sprinkle in 1 tsp of garlic powder and 1 tsp of chili powder, along with salt and pepper to taste.
  • Stir the mixture well to combine all ingredients.
  • Cover the crockpot and cook on low for 2-3 hours, stirring occasionally.
  • Once hot and gooey, serve warm with tortilla chips or as a nacho topping.

Notes

For variations, try mixing in different cheeses or adding cooked ground beef or shredded chicken. Adjust spice levels as desired.
