Ingredients
  

For the Green Sauce

  • 2 tablespoons lemon juice Plus lemon wedges for serving
  • 1/2 tablespoon Simply Organic Whole Cumin Seed Toasted and ground
  • 1/2 teaspoon coriander seeds Toasted and ground
  • 2 cloves garlic
  • 2 pieces serrano green chiles Stemmed
  • 1 bunch cilantro Leaves and stems
  • to taste pinch Kosher salt
  • 1/2 cup vegetable oil

For the Skewers

  • 2 pounds sardines Cleaned, scaled, and gutted
  • to taste pinch Kosher salt For seasoning

Instructions
 

Preparation of the Green Sauce

  • In a food processor, combine the lemon juice, ground cumin, ground coriander, garlic, green chiles, cilantro, and a pinch of Kosher salt. Pulse until you achieve a coarse texture.
  • Gradually add the vegetable oil while processing until the mixture becomes a smooth, luscious sauce. Taste and adjust seasoning with more salt if necessary.

Grilling the Sardines

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Skewer the sardines and season lightly with Kosher salt.
  • Heat your grill or cast iron grill pan to medium-high heat.
  • Grill the sardines for about 2 minutes on each side until well charred and cooked through.

Serving

  • Transfer the grilled sardines to a serving platter.
  • Drizzle with the vibrant green sauce and serve them hot, alongside fresh lemon wedges.

Notes

To enhance the sauce, consider adding other spices or herbs like mint or parsley. Adding extra serrano chilis can also boost spiciness.
