Ingredients

For the topping

  • 2 ripe avocados, soft and creamy
  • 1 cup cherry tomatoes, diced for maximum sweetness
  • 1/4 cup red onion, finely chopped for a mild kick
  • 2 tbsp fresh cilantro, chopped for a burst of freshness
  • 1 tbsp lime juice brightening up the flavors
  • 1 tbsp olive oil adding richness
  • to taste Salt and pepper to enhance the overall flavor

For the bread

  • 1 baguette or crusty bread, sliced for the perfect crunch
  • 1 clove garlic, halved to infuse the bread

Instructions

Preparation

  • Begin by cutting the avocados in half, carefully removing the pits. Scoop the vibrant green flesh into a mixing bowl.
  • Add a splash of lime juice, a sprinkle of salt, and a dash of pepper. Smash the avocado to your preferred consistency; whether you like it chunky or smooth, the choice is yours!

Mixing

  • In a separate bowl, combine the diced cherry tomatoes, finely chopped red onion, and fresh cilantro.
  • Drizzle olive oil over the mixture, then season with salt and pepper to taste. Toss everything together gently to allow the flavors to meld beautifully.

Toasting the bread

  • Preheat your oven to 375°F (190°C). Lay the bread slices flat on a baking sheet, drizzle with a touch of olive oil, and place them in the oven to toast for about 10 minutes, or until they are golden brown.
  • To add an aromatic touch, rub the toasted surfaces with the cut side of the garlic clove.

Assembly

  • Once your bread is toasted, it’s time to assemble! Generously top each slice with your smashed avocado mixture, ensuring each piece is well-covered.
  • Follow this by adding a spoonful of the fresh tomato mixture on top; let those vibrant colors shine.

Notes

To keep your avocados fresh longer, consider adding a bit more lime juice before serving. For added heat and flavor complexity, you can incorporate diced jalapeños or feta cheese into the tomato mixture. To turn this appetizer into a light meal, add grilled chicken or chickpeas.
