Ingredients

For the chicken

  • 1 pound boneless, skinless chicken breasts or thighs, trimmed to about 1/2 inch thick Juicy and plump chicken to soak up flavors.
  • 3/4 cup buttermilk Adds moisture and tang, ideal for marinating.
  • 1 large egg Helps the coating stick.
  • 2 tablespoons Cajun seasoning Provides authentic Louisiana flavor.
  • 1 cup flour Essential for frying to create the crispy crust.
  • 2 tablespoons cornstarch Helps achieve extra crunch in the batter.
  • 1 teaspoon baking powder Makes the crust lighter.
  • 4 cups vegetable or peanut oil For frying to golden perfection.
  • 4 buns optional, lightly toasted For sandwiches.
  • 6 tablespoons jalapeno honey Adds a sweet heat contrast.
  • 4 tablespoons mayonnaise Adds creaminess.

Instructions

Marinate the Chicken

  • Marinate your chicken in a mixture of buttermilk, egg, and 1 tablespoon of Cajun seasoning. Let it sit for at least one hour, or overnight for best results.

Prepare the Coating

  • In a separate bowl, combine flour, remaining Cajun seasoning, cornstarch, and baking powder.

Dredge the Chicken

  • Remove the chicken from the marinade and dredge each piece in the seasoned flour mixture, ensuring an even coating.

Heat the Oil

  • Heat the oil to about 350°F (180°C) in a large pot.

Fry the Chicken

  • Carefully fry the chicken until golden brown on each side, approximately 4-5 minutes per side.
  • Transfer to a wire rack to drain excess oil. Keep warm in a low-temperature oven if desired.

Assemble the Sandwiches

  • Layer a piece of crispy fried chicken on a lightly toasted bun, drizzle with jalapeno honey, and spread with mayonnaise.

Notes

Consider double dredging for extra crunch. Resting the fried chicken helps maintain crispiness. For a healthier option, bake at 400°F (200°C) for 25-30 minutes.
