  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper

  • 1 pound cod fillets

For the Coating

  • 2 cups crushed cornflake crumbs
  • 1 teaspoon Cajun seasoning

For Frying

  • In a medium bowl, whisk together the beer, flour, egg, garlic powder, salt, and pepper until smooth.
  • Carefully add the cod fillets to the batter, ensuring they are completely coated.

Coating

  • In another bowl, combine cornflake crumbs and Cajun seasoning until evenly mixed.
  • Dip each battered cod fillet into the cornflake mixture, pressing gently to help it stick.

Frying

  • In a heavy skillet or deep fryer, heat oil to 365 degrees F (185 degrees C).
  • Fry the coated cod fillets until golden brown, approximately 4-5 minutes per side. Drain on paper towels before serving.

Notes

Ensure the oil is hot enough before adding fish for crispy texture. For a healthier option, you can use whole wheat flour and cornstarch. Consider serving with a homemade tartar sauce for enhanced flavors.
