Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • In a large sauté pan over medium-high heat, add the lean ground chicken and crumble it as it cooks.
  • Once the chicken is fully cooked, about 5-7 minutes, stir in the drained canned corn and diced red onions. Cook for an additional 3 minutes.
  • Add in the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Mix well and reduce heat to low.
  • Gently fold in the mayo and allow the mixture to sit over medium heat for a couple of minutes.
  • Line a baking sheet with your hamburger buns and toast until lightly browned, approximately 4-5 minutes.

Assembly

  • Remove the buns from the oven and spoon generous portions of the chicken mixture onto the bottom buns.
  • Sprinkle the shredded cheese generously over the filled buns and cap with the top halves.

Serving

Notes

Consider adding diced bell peppers or jalapeños for added crunch and heat. For a different flavor profile, use ground turkey or beef instead of chicken.
