For the Chili-Lime Dip

Instructions
 

Preparation

  • Begin by adding the shrimp to a food processor and pulsing until coarsely chopped.
  • Transfer the shrimp to a spacious large bowl.

Mixing

  • In the bowl containing the shrimp, add the panko breadcrumbs, minced garlic, diced red bell pepper, chopped cilantro, sliced chives, Dijon mustard, eggs, Tabasco sauce, lemon zest, and salt.
  • Carefully mix everything just until well combined.

Shaping

  • Form the mixture into about six patties using your hands.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat.
  • Once hot, add the patties, cooking them for approximately 4-5 minutes on each side until they turn a golden brown.

Serving

  • Remove the cooked shrimp cakes from the skillet and optionally garnish with extra chives.
  • Serve with the zesty chili-lime dip and lemon wedges.

Notes

If the mixture is too wet, add more panko to achieve desired consistency. Adjust the heat with more Tabasco or chili flakes to taste. Pair with a side salad or rice for a complete meal experience.
