Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter

For the cheesecake filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

For the toppings

  • 1/2 cup fresh strawberries, chopped
  • 1 cup crushed cornflakes
  • 1/4 cup white chocolate chips (optional) Melt for drizzling

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
  • Press the mixture firmly into mini muffin tins or silicone molds to form the crust.
  • Bake for 8 minutes until lightly browned. Remove from the oven and allow to cool completely.
  • In a mixing bowl, beat softened cream cheese until smooth. Gradually add powdered sugar, vanilla extract, and sour cream, mixing until creamy.
  • Once the crusts are cool, spoon the cheesecake filling into each one until filled to the top.
  • Mix chopped strawberries with crushed cornflakes and spoon the mixture over the cheesecake filling in each bite.
  • If desired, melt the white chocolate chips and drizzle over the top of each bite.
  • Refrigerate for at least 2 hours to set before serving.

Notes

Consider using flavored cream cheese for enhanced flavor. You can substitute cornflakes with crushed nuts or pretzels for additional crunch.
