Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  • In another bowl, whisk together the buttermilk, melted butter, eggs, vanilla extract, and red food coloring.

Mixing

  • Slowly add the wet ingredients to the dry ingredients, mixing gently until just combined.
  • Add the white vinegar to the batter and mix until smooth.

Baking

  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely on a wire rack.

Frosting

  • In a medium bowl, beat together the cream cheese and softened butter until smooth and creamy.
  • Gradually add the powdered sugar, mixing until fully combined.
  • Add the pureed strawberries and vanilla extract, stirring until incorporated.
  • If the frosting is too thick, add the heavy cream to achieve the desired consistency.
  • Once the cupcakes have cooled, frost them generously and decorate as desired.
