Dough Preparation

  • In a small bowl, combine the active dry yeast with warm milk and granulated sugar. Let sit for about 5 minutes until frothy.
  • In a large mixing bowl, add melted butter, egg, and salt. Stir in the yeast mixture until combined.
  • Gradually incorporate the all-purpose flour, one cup at a time, until a dough starts to form.
  • Dust a clean surface with flour and turn the dough out, knead for about 5-7 minutes until smooth and elastic.
  • Place the kneaded dough in a greased bowl, cover with a clean cloth, and let rise for about 1 hour, until doubled in size.

Filling Preparation

  • While the dough is rising, prepare the cheesecake filling by blending softened cream cheese, powdered sugar, heavy cream, and vanilla extract until smooth.
  • For the strawberry topping, combine chopped strawberries, sugar, and lemon juice in a bowl, allowing to macerate for about 15 minutes.

Assembly and Baking

  • Once the dough has risen, gently punch it down. Roll it out on a floured surface, spread cheesecake filling over the dough, and roll it up tightly.
  • Slice into 12 even pieces and place in a greased baking dish. Let rise for another 30 minutes.
  • Preheat oven to 350°F (175°C). Bake for 20-25 minutes until golden brown.
  • Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  • Once the rolls are done, drizzle glaze over warm rolls and top with macerated strawberries. Serve warm.

Notes

Use warm milk to activate the yeast properly. Consider adding a pinch of cinnamon for flavor. For fluffier rolls, allow longer rise times.
