Ingredients
  

For the dough

  • 2.25 cups all-purpose flour
  • 0.25 cups granulated sugar
  • 1 packet active dry yeast (2 1/4 tsp) Can substitute with instant yeast.
  • 0.5 teaspoon salt
  • 0.5 cups whole milk, warmed
  • 0.25 cups warm water
  • 0.25 cups unsalted butter, melted
  • 1 large egg

For the filling

  • 8 oz cream cheese, softened Can substitute with mascarpone or dairy-free alternative.
  • 0.25 cups granulated sugar For filling.
  • 0.5 cups fresh strawberries, finely chopped Can use thawed frozen strawberries.
  • 0.25 cups powdered sugar For filling.
  • 1 teaspoon vanilla extract For filling.

For the glaze

  • 0.5 cups powdered sugar
  • 2-3 tablespoons heavy cream or milk
  • 0.5 teaspoon vanilla extract

Preparation

  • Activate the Yeast: In a large mixing bowl, combine the warm milk, warm water, and 1/4 cup of granulated sugar. Sprinkle the yeast over the liquid and let it sit for 5-10 minutes until it becomes frothy.
  • Make the Dough: Add the melted butter, egg, and salt to the yeast mixture. Gradually sprinkle in the flour, stirring until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
  • Let it Rise: Place the dough in a greased bowl, cover with a cloth, and let it rise for 1 to 1.5 hours until doubled in size.
  • Prepare the Filling: In a medium bowl, beat together cream cheese, 1/4 cup granulated sugar, 1/4 cup powdered sugar, chopped strawberries, and vanilla extract until smooth.

Assembly

  • Shape the Rolls: Punch down the dough and roll it into a 12x18 inch rectangle. Spread the strawberry cheesecake filling evenly, leaving a small border.
  • Roll and Slice: Starting from one edge, roll the dough into a log and slice into 8-10 rolls. Place in a greased baking dish.
  • Second Rise: Cover the rolls and let them rise again for 30-45 minutes. Preheat the oven to 350°F (175°C).

Baking

  • Bake the Rolls: Bake for 25-30 minutes until golden brown.
  • Prepare the Glaze: While baking, mix powdered sugar, vanilla extract, and heavy cream or milk until smooth.
  • Glisten and Serve: Cool rolls for 5 minutes, then drizzle glaze on top. Serve warm.

Notes

Ensure all ingredients, particularly cream cheese, are at room temperature for best blending. Add cinnamon for extra flavor, or try other fillings like chocolate chips. Storage: Keep in an airtight container at room temperature for up to 2 days or in the fridge for a week. Freeze individually wrapped for longer storage.
