Filling

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line your baking sheets with parchment paper.
  • In a mixing bowl, sift together the powdered sugar and almond flour until smooth.
  • In a clean bowl, beat the egg whites with cream of tartar until soft peaks form.
  • Gradually add the granulated sugar while continuing to beat until stiff peaks form.
  • Gently fold in the sifted flour mixture, vanilla extract, and pink food coloring until the batter is smooth and shiny.

Baking

  • Transfer the macaron mixture into a piping bag and pipe small, even circles onto the prepared parchment paper.
  • Tap the baking sheets against the counter to release any air bubbles and let the macarons rest for 30-60 minutes to form a skin.
  • Bake the macarons for 15-18 minutes, then let them cool completely on the baking sheets.

Filling

  • Beat the softened butter with the powdered sugar until fluffy.
  • Stir in the strawberry jam to create the filling.
  • Pipe the filling onto the flat side of half the cooled macarons and sandwich together.

Notes

For best results, ensure egg whites are at room temperature before whipping. Avoid overmixing the batter to keep the macarons from flattening. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for longer storage.
