Preparation of the Crust

  • Mix the crushed shortbread cookies with the melted butter in a medium bowl until moist yet crumbly.
  • Press the cookie mixture evenly into the bottom of a 9-inch springform pan.
  • Chill the pan in the refrigerator while preparing the filling.

Preparation of the Filling

  • In a large mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth.
  • Add eggs, one at a time, ensuring each is fully incorporated.
  • Fold in sour cream and heavy cream until blended.

Baking the Cheesecake

  • Preheat your oven to 325°F (160°C).
  • Pour the cheesecake filling over the chilled crust and smooth the top.
  • Bake for 50-55 minutes until the center is set but slightly jiggly.
  • Turn off the oven and crack open the door, allowing the cheesecake to cool gradually for about an hour.

Preparation of the Topping

  • Slice fresh strawberries and toss them in a bowl with sugar and lemon juice.
  • Let the mixture sit for about 30 minutes to release juices and create a sweet syrup.

Serving

  • Carefully remove the cheesecake from the springform pan and place on a serving platter.
  • Spoon the strawberry topping generously over the cheesecake before serving.

Notes

Ensure cream cheese is at room temperature for easy mixing. Press the crust tightly to prevent crumbling, and do not rush the chilling process.
