Ingredients
  

For the crust

  • 1 1/2 cups graham cracker crumbs With their buttery scent awakening fond childhood memories

For the cheesecake filling

For the strawberry swirl

  • 1/2 cup strawberry puree Bursting with the essence of fresh or frozen strawberries
  • 2 tablespoons sugar To coax out the sweetness in your strawberry swirl
  • 1 teaspoon lemon juice Brightening the flavors with a zesty punch

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed.
  • Transfer this mixture to the bottom of a springform pan and press it down firmly to create a crust.
  • Bake the crust in the oven for 10 minutes, then remove and let it cool.

Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add 1 cup of granulated sugar and vanilla extract, mixing well until combined.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the sour cream until the mixture is velvety.

Strawberry Swirl

  • In another bowl, combine the strawberry puree with 2 tablespoons of sugar and lemon juice, stirring gently.

Assembly

  • Pour the cream cheese mixture over the cooled crust, spreading it evenly.
  • Dollop the strawberry puree across the top, then use a toothpick or knife to swirl the puree into the cheesecake batter.
  • Bake in the preheated oven for 55-60 minutes, until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside for 1 hour.
  • Remove from oven and cool completely before placing in the refrigerator to chill for at least 4 hours, ideally overnight.

Notes

Ensure ingredients are at room temperature for a creamy texture. Be patient with the cooling and chilling times to prevent cracks.
