  • 4 slices slices of your favorite bread Choose a golden and crusty variety
  • 1/2 cup ricotta cheese Creamy and luscious
  • 1/4 cup sun-dried tomatoes Chopped into bits
  • 1 cup fresh spinach Chopped and bright green
  • 2 tablespoons butter Softened for spreading
  • 1 cup shredded mozzarella cheese Gooey and stretchy
  • 1 tablespoon olive oil Optional, for grilling
  • to taste Salt and pepper For seasoning

Preparation

  • Combine creamy ricotta cheese with chopped sun-dried tomatoes and spinach in a small bowl. Stir until well mixed and season with salt and pepper to taste.
  • Spread a generous layer of the ricotta mixture on one side of a slice of bread and sprinkle shredded mozzarella cheese on top before placing another slice of bread on top.

Cooking

  • Heat a skillet or griddle over medium heat. Spread softened butter on the outside of both sandwich halves.
  • Place the sandwiches in the pan and cook for about 3-5 minutes on each side until golden brown and crispy, with melted cheese.

Serving

  • Once done, remove the sandwiches from the pan, cut each sandwich in half, and serve hot.

Notes

Consider adding garlic powder or crushed red pepper flakes to the ricotta for an extra kick. Add crispy bacon for a smoky flavor or use different cheeses for variety.
