Preparation

  • In a large stockpot or Dutch oven, combine 4 cups of water, the halved garlic cloves, 1 1/2 teaspoons of kosher salt, and 1 1/2 teaspoons of freshly ground black pepper. Heat this mixture over medium heat.
  • Once the mixture comes to a boil, reduce the heat and allow it to simmer for about 10 minutes to infuse the water with the flavors of garlic and seasoning.
  • Stir in 2 cups of whole milk, the cubed unsalted butter, and 1/4 cup of brown sugar, allowing everything to blend beautifully. Return the pot to a gentle boil.

Cooking

  • Carefully add the halved corn ears into the pot. Reduce the heat and simmer for an additional 10 minutes, or until the corn is just tender.
  • Once the corn is cooked, transfer the Sweet Buttered Corn to a serving dish and garnish generously with 3 tablespoons of freshly chopped chives.

Notes

For extra flavor, consider adding a pinch of cayenne pepper. Substitute fresh corn with frozen corn if necessary, adjusting cooking time. Leftovers can be blended with milk for a delicious corn soup.
