  • 1 cup fresh pineapple, finely chopped For best flavor, use fresh pineapple.
  • 1/2 cup water Used to help combine the ingredients.
  • 1/4 cup white vinegar
  • 1/4 cup honey
  • 2 tablespoons soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 teaspoons cornstarch To thicken the sauce.
  • 2 tablespoons water (additional for cornstarch) Used to dissolve the cornstarch.
  • 1 teaspoon red chili flakes Adjust to taste for spiciness.

Preparation

  • Gather all your ingredients.
  • In a medium saucepan over medium heat, combine the chopped pineapple, 1/2 cup of water, white vinegar, honey, soy sauce, minced ginger, and minced garlic.
  • Bring the mixture to a gentle simmer and allow the flavors to meld.
  • Reduce the heat and let the mixture simmer for about 10 minutes, or until the pineapple is tender.
  • In a small bowl, create a cornstarch slurry by dissolving 2 teaspoons of cornstarch in 2 tablespoons of water.
  • Once the pineapple mixture has simmered, stir in the cornstarch slurry, add the red chili flakes, and salt to taste.
  • Continue to simmer for an additional 5 minutes until the sauce thickens.
  • Remove from heat and let it cool; the sauce will thicken more as it cools.

Notes

Store leftover sauce in an airtight container in the refrigerator for up to a week or freeze it in ice cube trays for longer storage. Reheat gently on the stove with a splash of water if necessary.
