  • 1/2 cup Cream Cheese Softened
  • 2 tbsp Sugar For sweetening the cream cheese
  • 1/2 tsp Vanilla Extract For flavoring
  • 1/2 cup Strawberries Diced

Quesadilla Base

  • 4 pieces Tortillas (6 inch) Soft and versatile
  • 2 tbsp Butter Softened for frying
  • 1 tsp Sugar For sprinkling on top
  • 1/2 tsp Cinnamon To add warmth and flavor

Dipping Sauce

Preparation

  • In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Beat until smooth.
  • Dice the fresh strawberries and fold them into the cream cheese mixture.

Cooking

  • Spread half of the strawberry cream cheese mixture over one tortilla.
  • In a medium skillet, melt 1 teaspoon of butter over medium-high heat.
  • Place the cream cheese side of the tortilla up in the pan. Add another tortilla with butter-side up on top.
  • Cook for 2-3 minutes on each side or until golden brown and crispy.
  • Mix cinnamon and sugar in a small bowl and sprinkle over the quesadilla once cooked.
  • Let sit for 2 minutes before slicing into wedges.

Notes

For variations, try adding ricotta cheese for a fluffier texture or mix in other fruits like blueberries.
