Preparation

  • Combine the sesame oil, rice vinegar, honey, minced garlic, grated ginger, chili flakes, and salt in a small jar. Shake well to blend the flavors.
  • Cook the frozen spring rolls according to the package directions (about 12 minutes) until golden brown. Let cool for 5 minutes before slicing in half.
  • In a large bowl or platter, mix the chilled rice noodles, sliced carrots, julienned cucumber, and red bell pepper.
  • Pour the prepared dressing over the noodles and vegetables, coating everything evenly.
  • Top the bowl with sliced spring rolls, chopped cilantro, fresh mint, and chopped peanuts.
