Ingredients
  

Peanut Sauce

  • 1/2 cup creamy peanut butter Adds richness and a velvety texture.

  • 1 tablespoon chopped pickled ginger Adds zesty tang.
  • 1 tablespoon toasted sesame oil Infuses a nutty flavor.
  • 1/3 cup sweet Thai chili sauce Balances the heat with sweetness.

Marinated Steak

  • 6 cloves garlic, chopped Enhances savory flavor.
  • 1 tablespoon fresh grated ginger Adds refreshing zest.
  • 2 tablespoons chili paste (Thai curry or Gochujang) Extra heat for spice lovers.
  • 2 pounds flank steak, cubed The star ingredient.

To Serve

  • 1 cup rice or coconut rice Soaks up flavors.
  • to taste limes, avocado, sesame seeds, and cilantro Fresh toppings.

Instructions
 

Preparation

  • In a glass jar or blender, combine the peanut butter, tamari, Thai red curry paste, pickled ginger, and sesame oil. Blend until smooth, adding water to reach the desired consistency.
  • In a large bowl, mix the sweet Thai chili sauce, tamari, chopped garlic, grated ginger, and chili paste. Add cubed steak and toss to coat evenly. Marinate for at least 10 minutes.
  • Thread the marinated steak onto skewers, leaving space between pieces.

Cooking

  • Preheat your grill to medium-high heat. Grill the skewers for about 8 to 12 minutes, turning occasionally until charred and cooked to your liking.

Serving

  • Serve the grilled skewers over rice or coconut rice, garnished with lime wedges, avocado slices, sesame seeds, and cilantro. Place peanut sauce on the side for dipping.

Notes

Marinate steak longer for deeper flavor. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Feel free to add vegetables to the skewers for extra flavor.
