Preparation

  • Start by toasting the dried guajillo and ancho chiles in a skillet over medium heat for 2-3 minutes until they become aromatic. Remove the stems and seeds.
  • Combine the toasted chiles, garlic, chopped onion, cumin, oregano, ground cloves, ground cinnamon, and one cup of beef broth in a blender and blend until smooth.
  • Season the beef chunks generously with salt and pepper.

Cooking

  • In a large pot, heat oil over medium-high heat and sear the beef until browned on all sides.
  • Pour the blended chili sauce over the seared beef, followed by the remaining beef broth and vinegar. Stir to combine.
  • Cover the pot, reduce the heat to low, and let it simmer for 2-3 hours until the beef is tender.
  • Once tender, shred the beef with a fork and stir it back into the broth.
  • Warm the corn tortillas, fill each with the shredded birria, and garnish with fresh cilantro and diced onion.

Notes

Keep a watchful eye when toasting the chiles to prevent burning. For a richer flavor, consider mixing beef with lamb. Letting the birria rest will amplify the flavors, and lime wedges can enhance freshness when served.
