Ingredients
  

Wontons

  • 1 package wonton wrappers
  • 1 pound ground chicken or turkey
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Soup Base

  • 4 cups chicken broth
  • 2 cups water
  • 2 cups bok choy, chopped
  • 1 cup sliced mushrooms
  • 2 pieces green onions, sliced
  • Salt and pepper to taste

Instructions
 

Prepare the Filling

  • In a large mixing bowl, combine the ground chicken or turkey with the soy sauce, sesame oil, grated ginger, and minced garlic. Using your hands, mix until all ingredients are well blended.

Make the Wontons

  • Take a wonton wrapper and place a teaspoon of the filling into the center. Moisten the edges with a bit of water to ensure a strong seal. Fold the wrapper in half to form a triangle and press the edges together firmly.
  • To shape the wonton, bring the two corners of the triangle together and pinch to seal. Repeat this process for the remaining wonton wrappers and filling until all are prepared.

Cook the Soup

  • In a large pot, bring the chicken broth and water to a rolling boil over medium-high heat. Once boiling, gently add the prepared wontons to the pot and allow them to cook for about 5-7 minutes, or until they float to the surface.
  • Stir in the chopped bok choy and sliced mushrooms into the pot. Let them cook for an additional 2-3 minutes or until the vegetables are tender but still retain some crunch.
  • Season the soup with salt and pepper to taste, stirring well to incorporate.
  • Serve the delicious wonton soup into bowls and garnish with sliced green onions.

Notes

Keep a small bowl of water nearby to moisten the wonton edges easily. For an extra flavor kick, consider adding a dash of chili oil at the end. You can also use leftover roast chicken or turkey; just shred it into the soup before serving. Feel free to experiment with different fillings or vegetables.
