Cheesecake Filling

  • 8 oz cream cheese, softened Rich and creamy base.
  • 1/2 cup white chocolate chips For the filling.
  • 1/2 cup raspberries, mashed Provides a fresh, fruity kick.
  • 1 cup graham cracker crumbs Adds crumbly texture.
  • 1/4 cup powdered sugar Sweetens the filling.
  • 1/2 tsp vanilla extract Adds depth to flavors.

Coating

  • 1/2 cup white chocolate chips For coating.
  • 1/4 cup crushed graham crackers For added crunch in the coating.

Instructions
 

Preparation of Filling

  • In a large mixing bowl, beat the softened cream cheese with the mashed raspberries and powdered sugar until smooth and lump-free.
  • Melt 1/2 cup of white chocolate chips in a microwave-safe bowl, heating them in 20-second intervals until fully melted and smooth.
  • Add the melted white chocolate and vanilla extract to the cream cheese mixture and stir until well combined.
  • Gently fold in the graham cracker crumbs until evenly distributed.

Formation and Cooling

  • Scoop out the mixture and form small balls, approximately 1 inch in diameter. Place them on a parchment-lined tray.
  • Freeze the balls for at least 1 hour until firm.

Coating

  • Melt the remaining 1/2 cup of white chocolate chips as previously described.
  • Dip each chilled cheesecake ball into the melted white chocolate, ensuring they are completely coated.
  • Roll the coated balls in the crushed graham crackers and return to the parchment-lined tray.
  • Place the tray in the freezer for an additional 15 minutes to set the coating.

Serving

  • Serve chilled, either in cupcake liners or on a decorative platter. Optionally, drizzle with melted chocolate and garnish with fresh raspberries.

Notes

Use softened cream cheese for better mixing. For variation, add lemon juice to the filling, or try dark/milk chocolate for the coating. Sprinkle sea salt on top for a sweet-salty contrast. These can be stored in an airtight container in the fridge for up to a week or frozen for up to a month.
