Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In a large mixing bowl, combine the softened butter and granulated sugar. Beat them together until light and fluffy.
  • Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  • Gradually mix in the dry ingredients with whole milk, starting and ending with the dry ingredients, mixing just until smooth.
  • Gently mix in the melted white chocolate and mashed raspberries.
  • Divide the batter equally between the prepared pans and bake for 25 to 30 minutes, or until a toothpick comes out clean.

Raspberry Sauce

  • In a saucepan, combine fresh raspberries, sugar, and lemon juice over medium heat. Stir occasionally until thickened, then remove from heat to cool.

Frosting

  • Beat the softened butter and powdered sugar together until creamy and fluffy. Add melted white chocolate, heavy cream, vanilla, and salt. Mix until fluffy.

Assembly

  • Once cakes are completely cool, place the first layer on a serving plate, spread frosting on top, and drizzle with raspberry sauce.
  • Add the second layer on top and frost the sides and top of the cake.
  • Garnish with fresh raspberries and drizzle more raspberry sauce.

Notes

Ensure cakes are completely cooled before frosting to prevent melting. Consider switching raspberries for strawberries or blueberries for variation.
